One of the best sobas in Japan is located in Togakushi, Nagano prefecture. Committed to make the best soba. They use soba from local farmers, harvested and grinded under controlled conditions of temperature and humidity. The dough is made with pristine mineral water from the area. Located in the middle of the mountains, the dining room overlooks a quiet forest that changes landscape with the seasons. All menu sets are top quality. Very nice place. Walking distance from Chusha Togakushi shrine.
