Kawaya is an original and popular yakitori specialized in chicken skin skewers. Only the skin of the neck is used and the meticulous elaboration lasts for around 6 days. The preparation process includes various operations like basic skin removal, slow pre-cooking at low temperature to remove fat, marinating the skin and some "secrets" they don't disclose. After the chicken skin is grilled on charcoal (they use charcoal from certain wood and supplier only), it is seasoned with their own recipe o ... f sweet sauce. The result is a spectacular crunchy texture on the outside and juicy on the interior of the skewer. Also, you will be able to order the typical yakitori dishes and grilled seasonal vegetables.
