Koukaibou has been open since 2001. The master, Taguchi-san, was one of the first chefs to mix two types of broth and to create the now-commonly known “new generation Ramen.” The specialty in the shop is the tonkotsu-gyokai, and they normally deliver you the Ramen with less soup than other shops in order to make it lighter and easier to digest. They carefully select the toppings. One of the most popular toppings is the boiled egg, which they deliver in perfect condition.
