Soranoiro become since the beginning a reat optin for vegetarian and vegan gourmets (not all ramen are vegan or vegetarian). The chef Miyazaki-san used to work for some of the great ramen shops in Tokyo before and also as a ramen fan and connoisseur, when he open his Soranoiro is not strange there was a lineup outside almost always. His signature ramen are the vegan ramen with noodles made of paprika, but he also has some meat options (light broth). Note: Due the popularity of the shop they close when they run out of soup (broth), that's why is recommended to go early and lineup.
