The Nikomi udon is original from Nagoya and Yamamotoya Sohonke has been keeping the original recipe for their shops. The Nikomi udon is made from red miso paste which gives the salty and red-brown color to the broth. They mastered this style of udon and their most acclaimed dish is the Oyako-nikomi udon wich includes meat and egg together with vegetables. The balance between the soup taste and thickness and the texture of the udon noodles are really nice. You can also enjoy their classic Miso oden (specially during he cold season). The shop is located in the 9th Floor of the Meitetsu Department store near the Nagoya JR station, making it perfect if you are around Nagoya for a daily trip and want to enjoy something original fro the area but close to the station.
