Genji Soba has a rich and eventful history. Originally founded as a sukiyaki restaurant in 1929 in the Shinsekai area, it disappeared during the bombings of World War II. It was later established in Nara and then moved to Namba in 1965, where it became a soba restaurant, specializing in buckwheat noodles that are very popular in Japan. Genji Soba produces its own noodles, starting from milling the buckwheat to kneading and cutting the noodles. They offer 100% buckwheat noodles, which allows t ... hem to control the production process and ensure that part of the menu is gluten-free, suitable for those with celiac disease. Another distinctive feature is that they also offer Tsuyu (noodle dipping sauce) that is free from animal products (using only vegetables: seaweed, shiitake mushrooms, champignons, tomatoes, carrots, onions, etc.), providing vegan options as well.
