Ginza Izariya is a kappo-kaiseki-style restaurant, specializing in cuisine from Kochi prefecture, Tosa region. Essential is the beautiful tataki, very typical of Kochi prefecture, Shikoku island. Large portions of bonito are roasted in the open kitchen with the ephemeral straw fire, that is, high temperature for a short time: outside burned and inside practically raw. This speciality was developed in Edo times, when the feudal lord of the area forbade eating raw fish to avoid disease, the locals ... roasted it this way to continue eating their bonito in sashimi, but now with the characteristic smoky aroma of this specialty. Basically it is a cuisine around the fish brought daily from Kochi and the Toyosu market, excellently paired with 18 types of Kochi sake, which in general is a light, dry and mineral sake that combines excellently with fish. Also noteworthy is the rice, boiled in a kettle, of one of the best varieties that exist: hinohikari, which only grows, of course, in Kochi. Small restaurant with 8 seats at the bar and a tatami room. It has only 3 tasting menus starting from 15000 yen. Relaxed atmosphere, cozy lighting. Also with branches in Madrid and Kobe.
