When you enter Mensho, you don’t know if you are in a ramen shop or a laboratory. The owner is Tomoharu Shono. He believes in the vertical concept of management and control of the ingredients—from the field or the ocean to the table—are the keys to providing the most fresh and consistent bowl of Ramen. Mensho not only takes good care of the ingredients, but it also one of the best Ramen dishes ... in Tokyo. They process their own noodles and dry the fish.
