Uokyu Ginza is an old shop specializing in kyokazuke. Traditionally marinated fish with rice paste after filtering sake (kazu) which gives the fish an elegant sweet and sour taste and a firm chewy texture. This restaurant started as a fish wholesaler, at the beginning of the 20th century, evolving later as a specialist in this type of marinades. The first floor is a take out, souvenir shop, where many Japanese go to buy this delicacy as a gift or to eat at home. The second floor is the restauran ... t where they offer menu sets based on this technique. The most popular is the mix of three fish types: salmon, horse mackerel and cod. All sets are accompanied by an assortment of pickles, miso soup and excellent rice. It is quite a popular place where there are not yet many tourists. Excellent place to taste a traditional meal at reasonable prices.
