Agezuki is not only about the quality of their deep-fried pork cutlet in Japanese named Tonkatsu, but also is the story of the chef behind the counter. Chef Go Hoshina has been spending 30 years doing Tonkatsu and taking notes about temperatures, humidity, types of oil, pork, breadcrump, etc. During those years the chef come with the final menu which consists in Minami no Shima, an award-winning breed of pork from Miyazaki prefecture that because of the scarcity is only sold to a few restaurants in Japan. The chef will start by cooking slowly at low temperature and then change it to another pot with high temperature for short time, leaving the pork cutlet perfectly soft, juicy and with a lot of aroma. At Agezuki they perfected Tonkatsu to an art form. NOTE: At lunch time during peak hours (12:00pm is not strange to have a long queue and wat for as long as 30 minutes but earlier or later is much shorter. During dinner time if you want to skip queues we can arrange a Free Reservation for our Japan Gourmet Pass members, but if you prefer you can show up at the restaurant and just lineup and wait for your turn. The waiting time will be rewarded with an excellent Tonkatsu.
